What began at ten years old washing dishes in his father’s Long Island restaurant has grown into a two-decade career mastering every station—front and back of house—to help venues exceed guest expectations and regulatory standards.

Meet The Founder

Nickolas Vastardis
Nickolas’s journey started at the Bay Shore Palace, where he balanced school and long kitchen nights, rising from dishwasher to line cook by age 22. He then sharpened his craft as Sous Chef at The Brasserie in Manhattan—leading teams, designing seasonal menus, and maintaining flawless health-department records.

After transitioning front-of-house, Nickolas spent eight years as a Restaurant Manager, building guest-service training programs and SOPs that elevated staff performance and guest satisfaction. For the past five years he’s been a senior server and bartender at Frankie & Johnnie’s Steakhouse, where his operational rigor and flair for hospitality have become a fixture.

Today, as founder of Audit & Ice Hospitality Solutions, Nickolas personally leads every audit and compliance review—delivering actionable insights, airtight systems, and discreet support so your venue excels in both service and safety.
